Honey Almond Energy Bites
- 1 cup rolled oats
- 1/2 cup almond butter (or any nut butter of your choice)
- 1/3 cup Paradis Valley Honey
- 1/2 cup chopped almonds
- 1/4 cup mini chocolate chips, hemp seeds, dried cranberries (optional)
- 1/2 teaspoon vanilla extract
- A pinch of salt
In a mixing bowl, combine the rolled oats, almond butter, Paradis Valley Honey, chopped almonds, mini chocolate chips (if using), vanilla extract, and a pinch of salt.
Stir the mixture well until all the ingredients are evenly incorporated. You can use a spoon or your hands to mix.
Once the mixture is well combined, place it in the refrigerator for about 15-30 minutes. Chilling the mixture will make it easier to handle and shape into bites.
After chilling, remove the mixture from the refrigerator. Scoop out small portions of the mixture and roll them into bite-sized balls using your hands. You can make them as big or as small as you like.
Place the energy bites on a tray or plate lined with parchment paper.

Once you've rolled all the mixture into bites, return them to the refrigerator for another 15-30 minutes to firm up.
Once the energy bites have set, transfer them to an airtight container or snack-sized bags for your lunch kit.
