Honey Ginger Cookie
Here’s the recipe you need to spoil your favorite people with cookies:
1 cup white sugar
1 cup margarine
1 cup Paradis Valley Honey
1 tsp vanilla extract
1 tsp maple extract
1 tsp baking soda
1 tsp ground ginger
1 tsp cinnamon
1⁄2 tsp cloves
1⁄2 tsp salt
4 cups flour
1⁄2 cup rolled oats
1⁄2 cup finely chopped walnuts (optional)
1⁄2 cup coconut
1 cup raisins
In a saucepan, melt together sugar, margarine, and honey.
Let cool. In another large bowl, mix together (with hand mixer) eggs, vanilla, maple, baking soda, ginger, cloves, cinnamon, and salt.
Add cooled honey mixture and blend well.
Slowly incorporate flour, rolled oats, and coconut.
With a spoon, mix in walnuts and raisins.
Line pan with parchment paper and drop cookies onto pan.
Bake at 325F for 10-12 minutes or until golden brown.
